Ingredients

Vegetables

  • 2 tablespoons vegetable oil

  • 4 cloves garlic, minced

  • 1 small onion, sliced

  • 1 medium carrot, thinly sliced

  • 1 cup broccoli florets

  • 1 cup cauliflower florets

  • 1 cup napa cabbage, chopped

  • 1 red bell pepper, sliced

  • ½ cup snow peas

  • 4 baby corn, sliced diagonally

  • ½ cup mushrooms, sliced

  • 2 green onions, chopped

Protein (Optional)

  • 8 oz (225 g) boneless chicken breast, thinly sliced

  • OR 8 oz shrimp

  • OR firm tofu for a vegetarian version

Sauce

  • 2 cups chicken broth (or vegetable broth)

  • 2 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar

  • ½ teaspoon white pepper

Cornstarch Slurry

  • 2 tablespoons cornstarch

  • 3 tablespoons water






Instructions

Step 1: Prepare the Sauce

In a bowl, whisk together the chicken broth, oyster sauce, soy sauce, sesame oil, sugar, and white pepper. Set aside.

Step 2: Cook the Protein

Heat the vegetable oil in a large wok or skillet over medium-high heat.

Add the chicken (or shrimp) and stir-fry for 3–4 minutes until nearly cooked. Remove from the pan and set aside.

Step 3: Sauté the Aromatics

Add the garlic and onion to the same pan.

Cook for about 1 minute until fragrant.

Step 4: Cook the Vegetables

Add the carrots first and cook for 2 minutes.

Next, add the broccoli, cauliflower, mushrooms, bell pepper, snow peas, baby corn, and napa cabbage.

Stir-fry for 4–5 minutes until the vegetables are tender-crisp.

Step 5: Add the Sauce

Pour the prepared sauce into the pan and bring it to a gentle simmer.

Return the cooked protein to the pan and mix well.

Step 6: Thicken the Sauce

Stir the cornstarch slurry once more and slowly pour it into the simmering sauce while stirring continuously.

Cook for another 1–2 minutes until the sauce becomes glossy and slightly thick.

Step 7: Finish

Sprinkle with chopped green onions.

Serve immediately with steamed jasmine rice or noodles.
